Surplus Spread Across Multiple Harvest Days

I am not sure why the program is telling me to keep 23g of a crop from a harvest on Friday to use Monday when the Monday harvest already has a surplus of 303g of that crop. Shouldn’t the 23g just be surplus on Friday and not needed to be kept since there are lots on the Monday harvest? See screen shot below. This is happening for many crops, not just one. The amounts of previously harvested are usually very small.
